Ingredients

  • 1 can diced tomatoes

  • 3tbsp tomato paste

  • 3tbsp flour

  • 3 cups chicken stock

  • 3 cups fresh spinach, packed

  • ½ diced onion

  • 1.5 bell pepper chopped

  • Protein (cooked chicken, bacon, pork, steak – use your leftovers or buy pre-cooked)

  • 4 cups tortellini

  • 1 cup parm

  • 1/3 cup heavy cream

Directions

  • Fry onion and pepper in a little olive oil
  • whisk in flour
  • slowly add the chicken stock, whisking, and it will thicken
  • dump in diced tomatoes and tomato paste, and cooked protein.
  • Bring to boil, add tortellini and cook for 10 minutes, stirring often.
  • When tortellini is cooked, stir in parm, cream and spinach.
  • let sit until spinach wilts.
  • Dish out and eat.
